Snowpocalypse and A Baked Spaghetti Recipe

It is literally the snowpocalypse in Wisconsin today..

We have over two feet of snow.. it’s insane!

Lily, however, is loving every minute.

She is going crazy over here.. someone plow the running trail so I can run some energy out of this little nutcase!

Andy and I managed to put our boots on and trek through the snow to our apartment’s exercise center to complete my “No More Treadmill Boredom” 5 mile Interval Workout.

Good news.. my guinea pig, Andy approved! He especially liked all of the walking breaks 😉

It was good to get a quick workout in, since we’re cooped up in this house all day!

I’m busy making tonight’s dinner now, but as promised.. I have to share the recipe from last night’s Baked Spaghetti dinner! It’s a hit in our house 🙂

Lightened Up Baked Spaghetti

Ingredients:

Newmans Own Roasted Garlic Spaghetti Sauce

2 lbs ground turkey

8 ounces, uncooked, whole wheat pasta

1 cup shredded reduced fat cheddar cheese

1 cup reduced fat colby jack cheese

1.) Brown ground turkey on stove, remove from heat.

2.) Boil water. Cook spaghetti according to directions on the package. Remove from heat.

3.) Heat up pasta sauce and add drained turkey meat.

4.) Cover the bottom of a 9×13 inch pan with sauce.

5.) Add a layer of cooked pasta, followed by a layer of 1/4 of the cheese.

6.) Repeat.

7.) Cover pasta and cheese with the remainder of the sauce.

8.) Bake the dish in a 350 degrees (F) oven for 30 minutes.

9.) Remove from oven.

10.) Top the pasta dish with the remainder of the cheese and put back in oven for 5 minutes.

11.) Remove, slice and enjoy!!

It’s not the healthiest dish in the entire world.. but it is better than the original version! Add a few roasted veggies or a salad and you’ve got yourself a delicious, mostly nutritious, meal!!

  1. That spaghetti bake looks fantastic! I have a similar old family recipe that is much less nutritious… so bad for you but I only make it about once a year.
    Hope the boyfriend is done with his finals and you can enjoy the Holidays 🙂

    I live on the west side of town and tried to get into work today. I made it to the top of a hill then got stuck. Needless to say I’m ‘working’ from home again!

    • Yikes! That sounds awful! I think I’d almost prefer the snow, at least around Christmas time 🙂 Hope it clears up and that you have a great last day of work!! Where are you vacationing to? Have fun!

  2. That spaghetti casserole looks amazing! And so does the snow 🙂 Your snow storm made its way to Boston and it is all wind and rain 😦 No white Christmas here!
