Last night’s dinner was a good one! Our Fitmixer meal plan called for pork chops for dinner, so I got started early on a new marinade to give the pork chops a little flavor!
Pork chops are not a regular meal in our house, as we usually stick to pork tenderloin or pulled pork when pork is on the menu, so I went into this dinner with low expectations of what I might create. I have to say, these turned out much better than I expected!
Oven Baked Pork Chops
3 5-oz pork chops
1/3 cup lemon juice
1/3 cup low-sodium soy sauce
1/4 cup worcestershire sauce
1/4 cup olive oil
1 1/4 TBS garlic powder
1 tsp white pepper
1 TBS minced garlic
2 TBS dried parsley flakes
1.) Grease a 9×13 baking dish.
2.) Mix lemon juice, soy sauce, worcestershire, olive oil, garlic powder, white pepper, minced garlic and parsley flakes in a mixing bowl. Stir until thoroughly combined.
3.) Place pork chops in prepared dish and pour sauce over the chops, until all of the pork chops are covered in marinade.
4.) Cover dish, and leave chops in refrigerator for at least 4 hours to marinate.
5.) When chops are marinated, preheat oven to 350 degrees.
6.) Uncover dish, and place in preheated oven for 30 minutes.
7.) After 30 minutes, remove chops from over, flip chops over, and place back in oven for 25 minutes to cook the other side.
8.) After 25 minutes, remove from oven.
About three days into our trip to Mexico, I received a text from my cousin/best friend Lauren with some VERY exciting news..
Naturally (as you can tell) I had a total meltdown of excitement. I mean, these are my two favorite people in the entire world here!! I couldn’t possibly be happier for them if I tried.
Pete was super adorable and planned the cutest proposal in the history of the universe. One of our good friends, Chloe, is an AMAZING photographer. Seriously, this girl is brilliant. Pete asked Chloe to help him secretly set up a proposal shoot, and had Chloe tell Lauren that she needed a couple to photograph for a new type of shoot, and she wanted to try it on a couple that she was comfortable with first. Lauren thought nothing of it, and since she and Pete just bought their first house together (holy exciting!!) they scheduled the shoot to be at the new house. At the end of the shoot, Pete got down on one knee and Chloe caught the moment. Lauren was completely blindsided by the entire thing, and obviously said yes.
